This meal is ideal for a dinner party or just if you are in on your own, can serve up to 12 people!
Step 1
You need to acquire a good bowl of rats. If your local butcher or supermarket don't have fresh rats, then I would recommend that you catch
your own. If you are not skilled in the art of rat catching then I would recommend that you
take a look at the techniques used by a
rat catcher in the 13th century.
Step 2
Burn the hairs off of your rat, they taste somewhat bitter. Use a blowtorch, flamethrowers seem a little bit too harsh.
Step 3
Wash your rat(s) thoroughly, we don't want any germs! If you get bored and can't wait for them to dry, try swinging them around a bit, I
have found this can save up to half an hour in the drying time.
Step 4
Cut the pieces of rat into portions, I like to make my cuts of rat look like pieces of chicken, but this is just a preference.
Step 5
Now we need to add some flavour to our lovely rat. I like to add lemon juice, chili, paprika, cayenne pepper and a large handful of tarragon that I lightly fry in
butter before adding it to the mix, be careful not to burn your butter. Add a little touch of oil before the butter to stop any burning occuring.
Leave your marinading rat for at least 2 hours but anything up to 2 days is good.
Step 6
Now you need to take your rat from your marinade and prepare to deep fry it, the cayenne pepper and the paprika will really add colour to your
rat once it's fried. Make sure your oil is hot enough, before adding your rat.

Step 7
Deep fat fry until your rat is crispy, tender and cooked.
Step 8
Serve to your friends or guests, or if it's just you, tuck in!
